Pesto Chicken Spaghetti Squash

Staying on the theme of Lunch, check out my Pesto Chicken Pasta recipe. It’s light, while providing you a great satisfying meal. My Pesto Chicken Pasta will stay good for a couple of days, so this recipe makes for a great lunch to take to work or on an adventure!


Pesto Chicken “Pasta”

Yield – 4-6 servings



Walnut Pesto:

·      2 cups freshbasil leaves

·      2 cups walnuts

·      5 garlic cloves

·      1 cup olive oil

·      salt and pepperto taste



·      4 large chickenbreasts, cut into 1-inch thick strips

·      1 cup walnutpesto

·      3 tbsp. oliveoil

·      2 cupsspaghetti squash, cooked and shredded

·      ½ cup sun-driedtomatoes

·      1 red bellpepper, cut into thin strips (optional)

·      salt and pepperto taste



Walnut Pesto:

1.    Blend allingredients in blender or food processor until finely ground


1.    Marinate chickenin pesto for about 30 minutes

2.    Heat oil in alarge skillet over medium-high heat. Sauté chicken strips in pan over mediumheat, about 7-10 minutes or until chicken is cooked through

3.    Add spaghettisquash, sun-dried tomatoes, and red bell pepper if using

4.    Season with saltand pepper, mix well, and serve
