Honey Mustard “Leftover” Salad

After cooking an amazing Thanksgiving meal, you’ve got a ton of leftovers, what do you do? You start with a salad recipe that is great for a lunch on the go, or a smart gluten free dinner. And remember, this recipe is perfect with any leftover meats.

3 hearts green and red romaine lettuces
1 red onion, thinly sliced
2 cups grape tomatoes, halved
3 assorted bell peppers, thinly sliced
1 large cucumber, diced
1 avocado, diced

Dressing:
¼ cup sugar
¾ cup mayonnaise
5 tbsp. honey mustard
2 tbsp. lemon juice
3 tbsp. olive oil
1 tbsp. chopped parsley

1. Chop and combine all vegetables in a large bowl
2. Mix dressing, pour over vegetables, and toss
3. Cut up some leftover turkey and sprinkle over the top of the salad
